Dressing:
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 2 garlic cloves, minced
- 1 teaspoon Dijon mustard
- 1/4 teaspoon kosher salt and pepper to taste
Salad:
- 2 cups uncooked spiral pasta
- 1 cup diced bell pepper (any color)
- 3/4 cup sliced pepperoncini
- 1/2 red onion, sliced
- 4 ounces cubed Provolone cheese
- 2 ounces thinly sliced deli ham
- 2 ounces thinly sliced hard salami
- 5 cups lettuce, chopped
- 3/4 cup cherry tomatoes, quartered
- Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, Dijon mustard, salt, and pepper.
- Salad: Cook spiral pasta in salted water according to package directions. Drain and cool.
- In a large bowl, combine bell pepper, pepperoncini, red onion, Provolone cheese, deli ham, hard salami, and pasta. Just before serving, add lettuce and cherry tomatoes. Drizzle with dressing, toss to coat, adjust seasoning if necessary, and serve.
