Chicken:
- 1 pound boneless/skinless chicken, cut into bite-size pieces
turkey Bacon:
- 1 pound turkey bacon, cooked and crumbled
Pasta:
Cheese Mixture:
- 2 (8 oz) packages cream cheese, softened
- 1 cup sour cream
- 1/2 cup milk
- 2 cups Mexican Cheddar Jack Shredded Cheese, divided
Vegetables:
- 6 Jalapeno Peppers, deseeded and diced
- 6 green onions, thinly sliced
- Prep: Grease a 12 x 9 casserole dish.
- Cook Pasta: Cook rotini pasta according to package directions.
- Cook Chicken and turkey Bacon: In a skillet, cook turkey bacon and chicken until chicken is cooked through and turkey bacon is crispy. Remove to a plate and blot excess fat.
- Prepare Cheese Mixture: In a bowl, combine cream cheese, sour cream, milk, 1½ cups of Cheddar Jack cheese, diced Jalapeno peppers, and most of the sliced onions.
- Assemble: Place cooked pasta in casserole dish. Add chicken and turkey bacon. Spoon cheese mixture over the top, stir gently to coat pasta.
- Bake: Top with remaining cheese. Sprinkle extra turkey bacon, onion slices, and jalapeno slices over the top. Bake at 350°F for 20 minutes.
