This Jalapeno Popper Chicken Casserole is a creamy, cheesy, and spicy dish that combines all the flavors of jalapeno poppers in a hearty casserole. Perfect for a comforting family dinner or a potluck gathering.

Chicken:

  • 1 pound boneless/skinless chicken, cut into bite-size pieces

turkey  Bacon:

  • 1 pound turkey  bacon, cooked and crumbled

Pasta:

  • 16 ounces rotini pasta

Cheese Mixture:

  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 cups Mexican Cheddar Jack Shredded Cheese, divided

Vegetables:

  • 6 Jalapeno Peppers, deseeded and diced
  • 6 green onions, thinly sliced

Instructions

  1. Prep: Grease a 12 x 9 casserole dish.
  2. Cook Pasta: Cook rotini pasta according to package directions.
  3. Cook Chicken and turkey Bacon: In a skillet, cook turkey bacon and chicken until chicken is cooked through and turkey bacon is crispy. Remove to a plate and blot excess fat.
  4. Prepare Cheese Mixture: In a bowl, combine cream cheese, sour cream, milk, 1½ cups of Cheddar Jack cheese, diced Jalapeno peppers, and most of the sliced onions.
  5. Assemble: Place cooked pasta in casserole dish. Add chicken and turkey bacon. Spoon cheese mixture over the top, stir gently to coat pasta.
  6. Bake: Top with remaining cheese. Sprinkle extra turkey bacon, onion slices, and jalapeno slices over the top. Bake at 350°F for 20 minutes.
