  • 1 large lemon, zested
  • 1/2 cup (113.5 g) butter, room temperature
  • 1/4 cup (55 g) brown sugar
  • 1 large egg yolk
  • 1 tablespoon lemon juice (about half a lemon)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 1/4 cups (175 g) all-purpose flour

Additions:

  • 3/4 cup (75 g) frozen raspberries, chopped small
  • Flaked salt for sprinkling

Instructions

  1. Preheat Oven: Preheat the oven to 350°F and line 2 baking sheets with parchment paper.
  2. Zest Lemon: In a large mixing bowl, combine granulated sugar and lemon zest, rubbing them together to release the fragrance.
  3. Cream Butter and Sugar: Add butter and brown sugar to the bowl, then beat on medium-high speed until light and fluffy. Mix in the egg yolk, vanilla, and lemon juice.
  4. Add Dry Ingredients: Gradually add salt, baking powder, baking soda, and flour to the mixture, being careful not to overmix.
  5. Incorporate Raspberries: Gently fold in the chopped frozen raspberries to the dough.
  6. Form Dough Balls: Scoop the dough into balls using a 3 tablespoon cookie scoop and place them on the baking sheets. Sprinkle with flaked salt.
  7. Bake: Bake the cookies for 12-15 minutes until lightly golden brown around the edges. Allow them to cool slightly on the baking sheets.
