  • 1/2 tsp salt
  • 1 cup (200 g) granulated white sugar
  • 1 cup (227 g) unsalted butter, softened
  • 1 egg, at room temperature
  • 2 tsp vanilla bean paste

Lavender Cream Cheese Frosting

  • 4 oz (113 g) cream cheese, softened
  • 1/4 cup (56 g) unsalted butter, softened
  • 1 cup (130 g) powdered sugar
  • 1/2 tbsp culinary lavender (finely ground)
  • 1 tsp vanilla bean paste
  • Purple food coloring (optional)

Instructions

  1. Make Lavender Sugar: Add the culinary lavender to a food processor and pulse until it’s finely ground. Pass it through a sieve to remove any large bits. Set half the ground lavender aside for the frosting and mix the remaining half with 1/2 cup granulated sugar in a medium bowl. Set aside for coating the cookie dough.
  2. Prepare Oven and Baking Sheets: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper to prevent sticking and facilitate easy clean-up.
