  • kosher salt and freshly ground black pepper, to taste
  • optional: finely chopped parsley for garnish

Instructions

  1. Peel and Prep: Peel the sweet potatoes, then dice them into 1-inch to 1 ½-inch chunks.
  2. Boil the Potatoes: Boil a pot of water, add the sweet potatoes, and cook for 20-30 minutes until fork-tender. Drain well.
