Ingredients

Scale

For Meatloaf

  • 2 pounds fresh ground beef
  • 1 cup breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • ¼ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

For Mushroom Gravy

  • 2 cups fresh mushrooms, sliced
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups beef broth
  • ½ cup heavy cream
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat Oven: Start by preheating your oven to 350°F (175°C). Prepare a casserole dish by greasing it or lining a baking sheet with parchment paper to prevent sticking.
  2. Prepare Meatloaf Mixture: In a large mixing bowl, combine ground beef, breadcrumbs, finely chopped onion, minced garlic, beaten eggs, ketchup, Worcestershire sauce, dried thyme, dried oregano, salt, and black pepper. Mix gently with your hands until just combined to keep the meatloaf tender.
  3. Shape and Bake: Shape the meat mixture into a loaf shape and place it into your prepared baking dish. Bake in the preheated oven for 50-60 minutes or until the internal temperature reaches 160°F (71°C) using a meat thermometer.
  4. Cook Mushrooms: While meatloaf bakes, melt butter in a skillet over medium heat. Add sliced mushrooms and sauté until golden brown and fragrant, about 5-7 minutes.
  5. Make Gravy: Sprinkle flour over the cooked mushrooms and stir constantly for 2 minutes to create a roux. Gradually whisk in beef broth, followed by heavy cream, and continue stirring until the gravy thickens to a creamy consistency, about 5-7 minutes. Season with salt and black pepper to taste.
  6. Serve: Let the meatloaf rest for a few minutes after baking, then slice into thick portions. Spoon the warm mushroom gravy generously over each serving and enjoy.

Notes

  • Do not overmix the meat mixture to ensure a tender meatloaf.
  • Use a meat thermometer to guarantee the meatloaf is fully cooked to a safe temperature of 160°F (71°C).
  • For a lighter gravy, substitute half-and-half for heavy cream.
  • Leftover meatloaf pairs well with mashed potatoes or steamed vegetables.
  • The mushroom gravy can be made ahead and reheated gently before serving.
