This hearty and satisfying Mountain Man Crock Pot Breakfast is a perfect way to kickstart your day with a delicious combination of hash browns, ham (or turkey bacon), veggies, cheese, eggs, and milk all cooked together in a slow cooker.

Ingredients:

  • 1 (32 ounce) bag frozen hash browns
  • 1 pound precooked ham or turkey bacon
  • 1/2 onion, chopped
  • 1 green pepper, chopped (optional)
  • 1 1/2 cup grated cheese, medium cheddar
  • 12 eggs
  • 3/4 cup milk, (we use whole)
  • Salt
  • Pepper

Instructions

    1. Grease or spray the inside of a slow cooker. Use a 4-quart size.

Place 1/3 of the hash browns in the slow cooker. Add 1/3 of the ham or turkey bacon, 1/3 of the onion, 1/3 of the green pepper (if desired), sprinkle salt and pepper. Top with 1/3 of the cheese.

  1. Repeat the layers: hash browns, meat, onion, green pepper (if desired), salt, pepper, and cheese. Repeat the layers one more time.
  2. In a medium bowl, blend eggs and milk. Pour over the mixture in the slow cooker.
  3. Cook: Cover the crockpot and cook on low heat for 6-8 hours.
