Instructions

  1. Make the Syrup: In a heavy-bottomed medium (2 qt) saucepan, combine the granulated sugar, water, and light corn syrup. Cook over low heat, stirring continuously until the sugar is completely dissolved. Once dissolved, increase the heat to medium-high and continue cooking without stirring until the syrup reaches 250°F (hard ball stage) on a candy thermometer.
  2. Prepare the Divinity Batter: As the syrup approaches 240°F, begin whipping the egg whites in a large mixing bowl with a whisk attachment until stiff peaks form. With the mixer on low speed, slowly and continuously pour the hot syrup into the egg whites. Stir in the vanilla extract.
  3. Beat Until Set: Increase the mixer speed to high and continue beating until the mixture loses its glossy appearance and holds its shape, about 15 minutes. Check the consistency after 15 minutes; if it is still runny and shiny, beat for an additional 5 minutes and recheck.
  4. Shape and Set the Divinity: Line a baking sheet with wax or parchment paper and lightly grease two spoons with non-stick cooking spray. Using the greased spoons, drop spoonfuls of the divinity mixture onto the prepared sheet. Place a pecan half on top of each candy. Alternatively, you can chop the pecans and stir them into the divinity batter before shaping.
  5. Allow to Set: Let the divinity candies set at room temperature for up to 2 hours until firm.
