  • 2 cups zucchini, grated and excess moisture squeezed out
  • 3 teaspoons vanilla extract
  • 1 cup pecans, chopped
  • 1/2 cup raisins

Instructions

  1. Preheat Oven: Preheat oven to 350°F and prepare a bundt pan by greasing and flouring it, or using non-stick baking spray.
  2. Mix Wet Ingredients: In a mixing bowl, combine eggs, sugar, and oil. Mix on medium-low speed until well blended.
  3. Add Dry Ingredients: Gradually add flour, baking powder, baking soda, salt, and cinnamon to the wet mixture. Mix until just combined.
  4. Incorporate Zucchini: Gently fold in the grated zucchini and vanilla extract into the batter.
  5. Add Nuts and Raisins: Stir in the chopped pecans and raisins by hand until evenly distributed.
  6. Bake: Pour the batter into the prepared bundt pan and bake at 350°F for about 45 minutes or until a toothpick inserted in the center comes out clean.
