Peach Bread Ingredients:

  • 2 large peaches (about 300g after peeled and chopped)
  • 1/2 tablespoon lemon juice
  • 3/4 teaspoon pure almond extract
  • 1 and 1/2 cups (210g) all-purpose flour, sifted
  • 2 and 1/2 teaspoons baking powder
  • 1 to 1 and 1/2 teaspoons cinnamon
  • 1/8 teaspoon salt (optional)
  • 2 large eggs, room temperature
  • 1/2 cup (105g) granulated sugar
  • 1/2 cup (115g) butter, melted and cooled
  • 1/2 cup (120g) milk, room temperature

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (177°C) and grease a 8 1/2 x 4 1/2-inch loaf pan. Line the bottom and sides with parchment paper, leaving about 2 inches of overhang on each side.
  2. Prepare the peaches: Peel and chop the peaches into 0.4 to 0.6-inch cubes. Place the cubed peaches in a bowl and mix in the almond extract and lemon juice.
  3. Combine dry ingredients: In a large bowl, whisk together the flour, baking powder, cinnamon, and salt (if using).
  4. Mix wet ingredients: In a separate bowl, whisk together the eggs and sugar until just combined. Stir in the milk and melted butter.
  5. Combine wet and dry mixtures: Pour the wet mixture into the flour mixture and stir until just combined.
  6. Add peaches: Fold in the peaches until evenly distributed in the batter.
  7. Bake: Transfer the batter to the loaf pan and bake for 44-48 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and serve: Allow the bread to cool in the pan for 30 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • You can sprinkle some sliced almonds on top of the bread before baking for added crunch.
