Instructions

  1. Prepare the dough: In a bowl, combine peanut butter, unsalted butter, and vanilla extract. Stir until the mixture is creamy and fully blended. Add salt and then gradually add the confectioner’s sugar one cup at a time, mixing thoroughly until all 3 cups are incorporated and the dough is thick and dough-like.
  2. Form the buckeyes: Roll the dough into one-inch balls using your hands or a cookie scoop. Place the balls onto a baking sheet lined with wax paper. Chill the baking sheet in the refrigerator for 30 minutes or in the freezer for 15 minutes to firm up the balls.
  3. Melt the chocolate: In a microwave-safe bowl, heat the dark chocolate melting wafers in 30-second increments, stirring between each, until fully melted and smooth.
  4. Dip the buckeyes: Remove a portion of the chilled peanut butter balls. Insert a toothpick halfway into each ball, then dip the ball about two-thirds into the melted chocolate, leaving a circle of peanut butter visible at the top. Gently shake off excess chocolate, then place back onto the cold baking sheet. Repeat for all balls.
  5. Set the coating: Allow the dipped buckeyes to harden at room temperature for 30 minutes or refrigerate for 10 minutes to speed up the process.
