For the Cake:
- 2 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 3 large eggs
- 1 cup canned crushed pineapple, drained (reserve juice)
- ½ cup coconut milk
- 1 teaspoon vanilla extract

- Prepare the Cake Batter – Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
