Oreo Crust:
- 26 golden Oreo cookies
- 6 tablespoons butter, melted
Cream Cheese Layer:
- 2 (8 oz.) packages cream cheese, room temperature
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs, room temperature
Pineapple Mousse:
- 1 cup heavy cream
- ¼ cup confectioners’ sugar
- ½ teaspoon vanilla extract
- 1 cup crushed pineapple, drained
Topping:
- ¼ cup sweetened coconut flakes
- Fresh pineapple chunks or canned
- Prepare the crust: Preheat the oven to 325°F (165°C). Lightly grease a 9-inch springform pan with cooking spray. In a food processor, pulse the golden Oreo cookies until finely ground. Mix with melted butter and press into the pan to form a crust. Bake for 8 minutes, then cool.
