Ingredients

Scale

For the Donuts

  • 1 15.25 oz box spice cake mix
  • ¾ cup canned pumpkin puree (NOT pumpkin pie filling)
  • 2 eggs
  • 3 tablespoons melted butter

For the Crumb Topping

  • ½ cup brown sugar
  • ¼ cup flour
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons butter
  • 2 tablespoons Quaker Quick Oats

For the Glaze

  • 1 cup powdered sugar
  • 1 tablespoon milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Lightly grease a donut pan or spray with non-stick cooking spray to ensure easy removal of the donuts.
  2. Mix Donut Batter: In a large bowl, combine the spice cake mix, canned pumpkin puree, eggs, and melted butter. Stir until the batter is smooth and all ingredients are fully incorporated.
  3. Fill Donut Pan: Spoon the batter evenly into the prepared donut pan, filling each cavity about three-quarters full to allow room for rising.
  4. Prepare Crumb Topping: In a separate bowl, mix together the brown sugar, flour, pumpkin pie spice, butter, and Quaker Quick Oats. Use a fork or your fingers to blend until crumbly and evenly mixed.
  5. Add Crumb Topping: Sprinkle the prepared crumb topping generously over each filled donut cavity, covering the batter evenly.
  6. Bake Donuts: Place the donut pan in the preheated oven and bake for 15-18 minutes or until a toothpick inserted into the donut batter comes out clean.
  7. Cool Donuts: Remove the pan from the oven and allow the donuts to cool in the pan for about 5 minutes. Then transfer the donuts to a wire rack to cool completely before glazing.
  8. Make Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and pourable. Adjust consistency by adding more milk or powdered sugar if needed.
  9. Glaze Donuts: Once the donuts are completely cool, dip the tops into the glaze or drizzle it over them with a spoon. Allow the glaze to set before serving.

Notes

  • Be sure to use canned pumpkin puree, not pumpkin pie filling, to avoid overly sweet or dense donuts.
  • Do not overfill the donut cavities; about three-quarters full works best for rising without overflow.
  • You can substitute whole wheat flour in the crumb topping for a nuttier flavor and added fiber.
  • Allow donuts to cool completely before glazing to prevent the glaze from melting off.
