A delicious twist on the classic burger, the Quesadilla Burger features thin grilled beef patties sandwiched between soft, toasted flour tortillas layered with cheddar cheese, fresh pico de gallo, crisp shredded lettuce, and a tangy homemade sauce combining mayonnaise and ketchup. This fusion of Mexican quesadilla and American burger flavors is quick to prepare and perfect for a satisfying meal.

Ingredients

Scale

For the Burgers and Quesadillas

  • 2 pounds ground beef (96% lean)
  • 12 street taco-size flour tortillas
  • 12 slices cheddar cheese

For the Toppings and Sauce

  • 1 1/2 cups Pico de Gallo
  • 1 1/2 cups shredded lettuce
  • 1/2 cup mayonnaise
  • 1/2 cup ketchup

Instructions

  1. Form the Patties: Shape the 2 pounds of ground beef into 6 thin hamburger patties, each about 4-5 inches in diameter to better fit the flour tortillas.
  2. Grill the Burgers: Preheat the grill to 400º Fahrenheit and grill the patties until they reach an internal temperature of at least 165º Fahrenheit for safe consumption.
  3. Toast the Tortillas: While the burgers grill, spray a frying pan lightly with cooking spray and toast the flour tortillas on medium-low heat for 2-3 minutes on each side until they are lightly browned but still slightly chewy inside.
  4. Assemble Cheese and Burger: Place one slice of cheddar cheese on a toasted tortilla, add a grilled burger on top, then place another slice of cheddar cheese over the burger.
  5. Prepare the Sauce: Mix together the mayonnaise and ketchup, then blend in 3/4 cup of pico de gallo to create a flavorful sauce.
  6. Build the Quesadilla Burger: Spread the prepared sauce over the cheese-topped burger, add a spoonful of additional pico de gallo and a handful of shredded lettuce, then top with another toasted flour tortilla.
  7. Serve: Serve immediately while warm and enjoy this fusion quesadilla burger.

Notes

  • Using lean ground beef helps reduce excess grease while grilling.
  • Make sure the internal burger temperature reaches 165ºF for food safety.
  • Lightly toasting the tortillas adds flavor and prevents sogginess.
  • The homemade ketchup-mayo-pico de gallo sauce adds freshness and tanginess.
  • Serve fresh as these are best enjoyed warm and crispy.
