Rattlesnake Pasta is a spicy and creamy pasta dish featuring Cajun-seasoned chicken, colorful bell peppers, and jalapeños in a rich Parmesan cheese sauce. This flavorful and satisfying meal is sure to become a family favorite!

Ingredients

Penne Pasta:

1 lb penne pasta

Chicken:

1 lb boneless, skinless chicken breast, cut into bite-sized pieces

Seasoning:

2 tbsp olive oil, divided, 1 1⁄2 tsp Cajun seasoning

Vegetables:

1 red bell pepper, sliced, 1 green bell pepper, sliced, 1⁄2 red onion, sliced, 3 cloves garlic, minced, 2-3 jalapeño peppers, sliced (remove seeds for less heat)

Sauce:

4 tbsp butter, 1⁄4 cup all-purpose flour, 2 cups milk or half-and-half, 1 cup grated Parmesan cheese, 1⁄2 tsp salt, 1⁄4 tsp black pepper, 1⁄4 cup chopped fresh parsley

Instructions

  1. Cook the Penne Pasta: Cook the penne pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  2. Sear the Chicken: Season chicken with Cajun seasoning. Sear in olive oil until browned. Remove and set aside.
  3. Sauté Vegetables: Sauté bell peppers, onion, garlic, and jalapeños until tender-crisp. Remove from skillet.
  4. Make the Sauce: Melt butter in the skillet, whisk in flour, then gradually add milk. Simmer until thickened. Stir in Parmesan, salt, and pepper.
  5. Combine and Serve: Add pasta, chicken, and veggies to the sauce. Toss to coat. Serve hot, garnished with parsley.
