This Reese’s Peanut Butter Banana Bread is a delightful twist on classic banana bread, incorporating the rich flavors of peanut butter and chunks of Reese’s cups. It’s moist, flavorful, and perfect for breakfast or as a sweet treat.

Ingredients

Scale

For the bread:

  • 2/3 cup smooth peanut butter
  • 1/2 cup butter, softened
  • 2 tsp pure vanilla extract
  • 2/3 cup granulated sugar
  • 2/3 cup packed light brown sugar
  • 4 large eggs
  • 3 cups self-rising flour

For mixing:

  • 1/2 cup plain Greek yogurt
  • 4 small ripe bananas, mashed (about 1 1/2 cups)
  • 1 1/22 cups chopped Reese’s cups

Instructions

  1. Preheat the oven: Preheat the oven to 350°F. Grease two loaf pans.
  2. Cream peanut butter, butter, and vanilla: Using an electric mixer, cream together the peanut butter, softened butter, and vanilla until fluffy.
  3. Add sugars: Mix in granulated and brown sugars until fully combined.
  4. Add eggs: Add eggs one at a time, beating well after each addition.
  5. Add flour and yogurt: Gradually add flour and yogurt, alternating and mixing until fully combined.
  6. Fold in bananas and Reese’s: Gently fold in mashed bananas and chopped Reese’s cups.
  7. Bake: Divide batter between pans and bake at 350°F for 35 minutes. Cover with foil if browning too quickly, then bake for an additional 15-20 minutes until a toothpick comes out clean.
  8. Cool: Let the bread cool in the pans for 15 minutes, then transfer to a cooling rack to cool completely.

Notes

  • You can add a sprinkle of extra chopped Reese’s cups on top before baking for a more decadent look.
  • This bread freezes well, so you can make a double batch and store one for later.
