Instructions

  1. Activate Yeast: In a large bowl, combine warm water with yeast and sugar. Allow to dissolve and activate for 2 minutes until slightly foamy.
  2. Make Dough: Add all-purpose flour and salt to the yeast mixture. Mix well until a sticky dough forms. Cover the bowl and let the dough rise for one hour until it has doubled in size.
  3. Prepare for Cooking: Lightly oil a cast iron tawa or flat pan and heat it over medium heat.
  4. Spread Dough: Drop a handful of the risen dough onto the hot tawa. Using your hands, a cassette cover, or dough scrapper, spread the dough thinly and evenly into a circular shape.
  5. Cook and Add Egg: Allow the dough to cook on the top side briefly until it starts to firm up. Then, spread half of the whisked egg evenly over the surface and continue cooking.
  6. Add Filling and Fold: Spread 2 tablespoons of salted cream cheese or your preferred filling over the cooked dough. Fold the bread in half and then fold again to form a triangle shape.
  7. Finish and Serve: Drizzle your favorite sauce such as honey or melted Nutella over the folded Regag. For a sweet version, spread Nutella directly on the cooked dough and top with fresh fruits and an extra drizzle of melted Nutella. Serve warm and enjoy.
