Russian Apple Kvas (Квас) Recipe

Ingredients:
- 8 cups apple juice
- 1/2 cup granulated sugar
- 1/2 tablespoon active dry yeast
- 1/2 teaspoon dark molasses (or 1 teaspoon instant coffee)
- 6 cups filtered water
- Prepare the Base: Fill a 16-cup glass jar with 8 cups of apple juice.
- Add Sugar and Yeast: Add the granulated sugar, active dry yeast, and dark molasses (or instant coffee) to the jar. Stir the mixture until the sugar is completely dissolved.
- Add Water: Pour in 6 cups of filtered water and stir to combine everything well.
- Cover and Let it Ferment: Cover the jar with multiple layers of cheesecloth or a cotton cloth and secure it with a rubber band over the rim. Allow the mixture to sit at room temperature for 18 hours to ferment.
- Chill the Kvas: After 18 hours, transfer the jar to the refrigerator. Once it’s fully chilled, remove the cloth and replace it with a lid. Do not seal the jar while it is warm, as it may cause too much pressure to build up inside.
- Serve: Serve your Russian apple kvas once it is completely chilled, and enjoy its refreshing, lightly fermented flavor.
