Santa Fe Chicken Foil Packets are a delicious and easy-to-make meal perfect for grilling outdoors. These flavorful packets are filled with chicken, beans, corn, peppers, and cheese, all seasoned with spices and cooked to perfection in foil packets on the grill.

Chicken Foil Packets:

  • 4 chicken breasts (78 oz each)
  • ½ cup shredded Mexican cheese or monterey jack
  • 2 cups whole kernel corn
  • 15 oz black beans, drained and rinsed
  • ¾ cup salsa or 10 oz rotel diced tomatoes and green chilies, drained
  • 1 cup diced bell peppers, any color
  • ½ tsp chili powder
  • cilantro, tomatoes, and jalapenos for garnish
  • salt and pepper to taste

Instructions

  1. Preheat the grill: Preheat the grill to medium-high heat.
  2. Prepare the foil packets: Place four large pieces of foil on a work surface and spray each with cooking spray. Put 1 chicken breast on each piece of foil and season with chili powder, pepper, and salt.
  3. Add ingredients: Divide the beans, salsa, corn, and peppers on top of the chicken breasts.
  4. Seal the packets: Fold the ends to seal each packet. Place the packets on the grill, vegetable side down, and grill for about 10 minutes.
  5. Grill and serve: Flip the packets over and grill for another 10-12 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F. Open the packets, top with cheese, and place the baking pan on the grill to melt the cheese. Serve and enjoy!
