Ingredients

Scale

For the Ground Beef Filling

  • 1 lb ground beef (85% lean)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • ½ cup beef broth
  • 1 tsp salt
  • ½ tsp black pepper

For the Mashed Potatoes

  • 2 lbs potatoes (Yukon Gold or Russet), peeled & diced
  • 3 tbsp butter
  • ½ cup milk
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Prepare the mashed potatoes: Boil the peeled and diced potatoes in salted water until fork-tender, about 15 minutes. Drain well and mash the potatoes with butter, milk, salt, and black pepper until smooth and creamy. Set aside.
  2. Cook the ground beef: In a skillet over medium heat, cook the ground beef until browned, about 5 to 7 minutes. Drain excess fat if necessary.
  3. Cook aromatics and combine: Add the diced onion and minced garlic to the beef and cook until softened, about 3 to 4 minutes. Stir in tomato paste, Worcestershire sauce, beef broth, and frozen mixed vegetables. Let the mixture simmer for 5 minutes to combine flavors and cook the vegetables.
  4. Preheat oven: Set your oven to 375°F (190°C) to preheat while assembling the pie.
  5. Assemble the Shepherd’s Pie: Spread the beef and vegetable mixture evenly in a baking dish. Carefully top with the mashed potatoes, spreading them evenly over the filling.
  6. Bake: Bake the assembled pie uncovered for 20 minutes, or until the mashed potato topping is slightly golden and the filling is bubbly.
  7. Serve: Allow the pie to cool slightly before serving for easier portioning and to let flavors meld.

Notes

  • You can use Yukon Gold potatoes for a creamier texture or Russet potatoes for a fluffier mash.
  • Feel free to add herbs like thyme or rosemary to the beef mixture for extra flavor.
  • Leftover Shepherd’s Pie can be refrigerated for up to 3 days or frozen for up to 2 months.
  • For a richer mashed potato topping, substitute milk with cream and add extra butter.
  • If preferred, add a sprinkle of shredded cheese on top before baking for a cheesy crust.
