Shrimp and Marinade
- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
Mango Salsa
- 1 large mango, diced
- 1/2 cup tomatoes, chopped
- 1/4 cup red onion, finely diced
- 2 tbsp cilantro, chopped
- 1 tbsp lime juice
Lime-Chili Sauce
- 1/2 cup Greek yogurt or mayonnaise
- 1 tbsp chili sauce or sriracha
- 1 tbsp lime juice
Additional Ingredients
- 1 ripe avocado, sliced
- 2 cups cooked rice
- Marinate Shrimp: Toss the peeled and deveined shrimp with olive oil, garlic powder, paprika, and salt in a bowl. Let the mixture marinate for 15 minutes to enhance the flavors.
- Prepare Mango Salsa: In another bowl, combine the diced mango, chopped tomatoes, finely diced red onion, chopped cilantro, and 1 tablespoon of lime juice. Mix well and chill the salsa until ready to serve to keep it fresh and vibrant.
- Grill Shrimp: Preheat the grill to medium-high heat. Cook the marinated shrimp for 2 to 3 minutes on each side until they are fully cooked and slightly charred, which adds a wonderful smoky flavor.
- Make Lime-Chili Sauce: In a small bowl, combine Greek yogurt or mayonnaise with the remaining lime juice and chili sauce or sriracha. Mix until smooth. Taste and adjust the spice level to your preference.
- Assemble Bowls: In serving bowls, start by layering 2 cups of cooked rice. Arrange the grilled shrimp, sliced avocado, and chilled mango salsa on top. Drizzle generously with the lime-chili sauce and serve immediately to enjoy the contrast of flavors.
Notes
- Marinate the shrimp in advance to deepen the flavor and save time before dinner.
- For extra crunch, add thinly sliced red cabbage or shredded romaine lettuce under the shrimp.
