Simple Baked Zucchini and Cheese is a delicious and easy-to-make vegetable dish that combines zucchini, bell pepper, tomatoes, and mozzarella cheese, seasoned with herbs and baked to perfection.

Zucchini and Vegetable Mix:

  • 2 large zucchini, cut into cubes
  • 1 green bell pepper, chopped
  • 1 onion, diced
  • 1 cup grape tomatoes, sliced in half
  • 1/2 cup mozzarella cheese, grated
  • 2 tbsp olive oil
  • 1 tsp Italian herb blend
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1 tsp cracked black pepper

Toppings and Garnish:

  • 1/2 cup mozzarella cheese, grated
  • 1 tbsp chopped parsley, for topping
  • 1/2 tsp red chili flakes, for garnish

Instructions

  1. Preheat the Oven: Set your oven to 375ºF (190ºC) to ensure it reaches the proper temperature before you begin baking the vegetables and cheese.
  2. Combine and Season the Vegetables: In a baking dish, add zucchini, bell pepper, onion, tomatoes, half of the mozzarella, herbs, garlic powder, salt, pepper, and olive oil. Mix well.
  3. Bake the Vegetable Mixture: Bake the seasoned vegetables for 20 minutes until zucchini is tender.
  4. Top with Remaining Cheese and Finish Baking: Sprinkle remaining cheese over the vegetables and bake for another 10 minutes until golden.
  5. Garnish and Serve: Top with parsley and red chili flakes before serving hot.
