  • 23 pounds beef chuck roast or rump roast, trimmed of excess fat (or leaner options like sirloin or boneless bottom round)
  • 3 cups low sodium beef broth
  • ¼ cup Worcestershire sauce
  • 2 tablespoons extra virgin olive oil
  • 2 yellow onions, quartered and thinly sliced
  • 3 cloves garlic, minced
  • 1 bay leaf
  • Salt and pepper, to taste

For Serving:

  • 46 rolls (preferably sturdy enough to hold up when dipped, such as French baguette or hoagie rolls)
  • 812 slices cheese (provolone, Swiss, Havarti, or Monterey Jack)

Instructions

  1. Prepare the Beef: Season the beef roast with salt and pepper. Sear in a skillet, then transfer to the slow cooker.
