For the French Dip:
- 2–3 pounds beef chuck roast or rump roast, trimmed of excess fat (or leaner options like sirloin or boneless bottom round)
- 3 cups low sodium beef broth
- ¼ cup Worcestershire sauce
- 2 tablespoons extra virgin olive oil
- 2 yellow onions, quartered and thinly sliced
- 3 cloves garlic, minced
- 1 bay leaf
- Salt and pepper, to taste
For Serving:
- 4–6 rolls (preferably sturdy enough to hold up when dipped, such as French baguette or hoagie rolls)
- 8–12 slices cheese (provolone, Swiss, Havarti, or Monterey Jack)
- Prepare the Beef: Season the beef roast with salt and pepper. Sear in a skillet, then transfer to the slow cooker.
- Make the Broth: Add broth, Worcestershire sauce, garlic, onions, and bay leaf to the slow cooker. Cook covered.
- Cook the Beef: Slow cook for 8–10 hours on low or 4–5 hours on high until tender.
- Shred the Beef: Remove, shred, and return beef to the slow cooker.
