A hearty and flavorful Slow Cooker Goulash recipe that is easy to make and perfect for a comforting meal. This dish combines ground beef, bell peppers, onions, and pasta in a rich tomato-based sauce, all cooked to perfection in a slow cooker.

For the Goulash:

  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 teaspoons jarred minced garlic
  • 1 green bell pepper, seeded and diced
  • 2 cups tomato basil pasta sauce
  • 8 oz tomato sauce
  • 15 oz diced tomatoes (with juice)
  • 1 cup water
  • 1 teaspoon herb and garlic seasoning
  • 6 oz pasta noodles (elbow macaroni or similar)

Instructions

  1. Brown the Beef (optional but recommended): In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add Ingredients to Slow Cooker: Add the browned beef, onion, garlic, bell pepper, tomato basil pasta sauce, tomato sauce, diced tomatoes, water, and herb and garlic seasoning to the slow cooker. Stir well to combine.
  3. Cook: Cover and cook on low for 4–5 hours or high for 2–3 hours.
  4. Add Pasta: About 30 minutes before serving, stir in the uncooked pasta noodles. Cover and cook until pasta is tender (check after 25–30 minutes).
  5. Serve: Stir well and serve hot. Optional: top with shredded cheese or fresh parsley.
