Chicken and Sauce

  • 2 pounds skinless, boneless chicken breasts, diced into 1 ½-inch pieces

  • 2 cups shredded mozzarella cheese

Instructions

  1. Prepare the Potatoes: In the bottom of a slow cooker, combine the cut potatoes, olive oil, 3/4 teaspoon of kosher salt, 1/2 teaspoon of ground black pepper, and paprika. Stir well to coat the potatoes evenly with the seasonings and oil.
  2. Add the Chicken: Place the diced chicken breasts on top of the seasoned potatoes. Sprinkle the remaining 1/4 teaspoon of kosher salt and 1/4 teaspoon of ground black pepper over the chicken to season.
  3. Combine the Sauce: In a small bowl, whisk together the creamy Parmesan garlic sauce and water or chicken stock until fully incorporated. Pour this mixture evenly over the chicken and potatoes in the slow cooker.
  4. Cook: Cover and cook on High for 4 hours or on Low for 6 hours, or until the chicken is fully cooked through and the potatoes are tender when pierced with a fork.
  5. Add Cheese: During the last 20 minutes of cooking, sprinkle the shredded mozzarella and optional grated Parmesan cheese over the chicken and potatoes. Cover again and continue cooking until the cheese is melted and bubbly.
  6. Garnish and Serve: Once cooking is complete, sprinkle chopped fresh parsley over the dish for a fresh, vibrant finish. Serve warm directly from the slow cooker.
