  • ½ Tbsp olive oil
  • 1 clove garlic, minced
  • ¼ lb frozen chopped spinach
  • Salt, to taste
  • Black pepper, to taste

For the Sandwich

  • 4 slices bread
  • 2 Tbsp butter
  • 1 cup shredded mozzarella cheese
  • 1 oz feta cheese, crumbled
  • 1 pinch crushed red pepper flakes

Instructions

  1. Sauté Spinach and Garlic: Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about one minute until fragrant. Add the frozen chopped spinach directly to the skillet, season with salt and black pepper, and continue cooking over medium heat until most of the moisture evaporates.
  2. Butter the Bread: Spread butter evenly over one side of each slice of bread. Place the slices butter-side-down on a clean surface to assemble the sandwiches.
  3. Add Cheese Layers: Distribute half the shredded mozzarella evenly over two slices of bread. Sprinkle crumbled feta cheese on top of the mozzarella.
  4. Assemble the Sandwich: Divide the cooked spinach evenly between the two sandwiches. Top the spinach with the remaining shredded mozzarella and sprinkle a pinch of crushed red pepper flakes. Cover each sandwich with the second slice of bread, ensuring the buttered side is facing outwards.
  5. Grill the Sandwiches: Preheat a large skillet over medium-low heat. Place the sandwiches in the skillet and cook for several minutes on each side until the bread is golden brown and crispy, and the cheeses inside are melted and gooey.
  6. Serve: Remove the sandwiches from the skillet, cut each in half, and serve immediately while warm.
