Ingredients

Scale

Bread and Egg Mixture

  • 12 slices white sandwich bread
  • 2 large eggs
  • ¼ cup half-and-half
  • ½ teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 cup granulated sugar

Filling

  • 8 ounces cream cheese, softened
  • 4 tablespoons granulated sugar
  • 5 to 6 ripe strawberries, capped and sliced very thin

Cooking

  • 3 tablespoons salted sweet cream butter

Instructions

  1. Flatten the Bread: Using a rolling pin, flatten each slice of white sandwich bread to create an even, thin base for rolling.
  2. Trim and Cover: Trim off the crust edges from the flattened bread slices, then cover them with a clean towel to prevent drying out.
  3. Prepare Egg Mixture: In a small mixing bowl, whisk together the eggs, half-and-half, and vanilla extract until well combined; set aside.
  4. Make Cinnamon Sugar: In a pie plate or shallow bowl, combine the ground cinnamon and granulated sugar, stirring until evenly mixed; set aside.
  5. Prepare Cream Cheese Filling: In a small bowl, stir together the softened cream cheese and 4 tablespoons of granulated sugar until smooth and fully incorporated.
  6. Assemble Roll-Ups: Spread approximately 2½ tablespoons of the cream cheese mixture on one end of each flattened bread slice. Top with an even layer of thinly sliced strawberries. Roll each slice carefully to avoid squeezing out the filling. Set aside.
  7. Heat Skillet and Butter: Place a 10 to 12-inch skillet over medium to medium-high heat and melt the salted sweet cream butter evenly.
  8. Cook the Roll-Ups: Dip each roll-up in the egg mixture ensuring it is well coated. Place roll-ups in the skillet, keeping them separated for even cooking. Monitor the heat to prevent butter from burning.
  9. Brown Evenly: Using tongs, turn the roll-ups quarter-turns frequently so they brown evenly on all sides until golden brown.
  10. Coat and Serve: Remove the roll-ups from the skillet and immediately roll them in the cinnamon-sugar mixture. Serve hot for the best taste and texture.

Notes

  • Use fresh, ripe strawberries for the best flavor and sweetness in the filling.
  • Flatten the bread evenly to ensure smooth rolling and prevent tearing.
  • Keep the heat medium to medium-high to avoid burning the butter during cooking.
  • Serve immediately after cooking to enjoy the crisp exterior and warm filling.
