Strawberry Shortcake Bark is a delightful no-bake treat combining creamy pink candy melts, luscious white chocolate, crunchy butter shortbread, and flavorful freeze-dried strawberries for a sweet, textured snack that’s perfect for gifting or enjoying anytime.

Ingredients

Scale

Chocolate and Candy Melts

  • 2 bags sweet tooth fairy light pink candy melts (approx. 14 oz each)
  • 1/2 bag white chocolate Ghirardelli wafers (approx. 7 oz)

Fruit and Cookies

  • 1 bag freeze dried strawberries (approx. 1 oz)
  • 1/2 package Walker’s pure butter shortbread (5.3 oz package, use 2.65 oz)

Instructions

  1. Melt Pink Candy Melts: Melt the sweet tooth fairy light pink candy melts according to the package instructions, ensuring the chocolate is smooth and fully melted for easy spreading.
  2. Prepare Baking Sheet: Line a small baking sheet with parchment paper. Pour the melted pink candy melts onto the parchment paper and spread evenly into a medium-thick layer to form the bark base.
  3. Add Strawberries and Shortbread: Lightly crush about 1 cup of freeze-dried strawberries and sprinkle them over the melted pink candy layer. Then, crush half of the shortbread package (about 2.65 oz) and scatter it evenly on top. Place the baking sheet in the freezer for 10 minutes to harden.
  4. Melt White Chocolate: After the first freeze, remove the baking sheet. Melt the white chocolate Ghirardelli wafers until smooth. Drizzle the melted white chocolate over the hardened pink candy layer.
  5. Top with Whole Strawberries: Place some whole freeze-dried strawberries onto the white chocolate drizzle so that they stick, but do not crush these strawberries.
  6. Freeze and Break into Pieces: Return the bark to the freezer for another 10 minutes until fully hardened. Once frozen, break the bark into pieces for serving or gifting.

Notes

  • Use parchment paper to prevent sticking and make removal easy.
  • Crushing some strawberries and shortbread adds texture, while whole strawberries on top enhance appearance.
  • Storing the bark in an airtight container in the fridge or freezer will keep it fresh longer.
  • Feel free to swap freeze-dried strawberries with freeze-dried raspberries for a different flavor twist.
