This Street Corn Pasta Salad is a delightful twist on the classic Mexican street corn, combining pasta with sweet corn, peppers, and a creamy dressing for a flavorful side dish or light meal.

Pasta:

  • 1 pound pasta

Dressing:

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • Juice of 1 lime
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Salad:

  • 2 cups cooked corn kernels
  • 1 red bell pepper, diced
  • ½ red onion, finely chopped
  • 1 jalapeno pepper, seeded and minced
  • ¼ cup freshly chopped cilantro

Instructions

  1. Cook the pasta: Boil the pasta in salted water according to package instructions. Rinse with cold water and set aside.
  2. Prepare the dressing: Whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a bowl.
  3. Combine ingredients: In a large bowl, mix pasta, corn, red bell pepper, red onion, and jalapeno. Pour the dressing over and toss gently.
