  • 2 (8-oz.) pkg. cream cheese, slightly softened
  • 6 tbsp. sugar
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. kosher salt

  • 3 tbsp. sprinkles

Instructions

  1. Prepare the Oven and Pan: Arrange a rack in the center of the oven and preheat to 375°F. In a 9″ x 9″ baking pan, place two perpendicular sheets of 12″ parchment paper overlapping with overhangs on all sides, then grease the parchment with cooking spray to prevent sticking.
  2. Form the Cookie Crust: Crumble the sugar cookie dough into small pieces and evenly spread them across the bottom of the prepared pan. Sprinkle 2 tablespoons of sprinkles over the dough and gently press to adhere.
  3. Bake the Crust: Bake the crust in the preheated oven until lightly browned, about 20 minutes. Remove from oven and let cool for 20 minutes. Lower the oven temperature to 325°F for the cheesecake layer.
  4. Prepare the Cheesecake Filling: In a food processor, pulse the cream cheese and sugar until smooth, scraping down the sides as needed, about one minute. With the motor running, add eggs one at a time, pulsing after each addition to blend. Then add vanilla extract and kosher salt, pulsing until fully combined.
