Cookie Cups

  • 3/4 cup salted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Sprinkles

Cream Cheese Buttercream Frosting

  • 2 ounces cream cheese, softened
  • 3 cups powdered sugar
  • 1/4 cup butter
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • Pink or red food coloring gel (optional)

Instructions

  1. Preheat oven to 350°F and grease 2 regular muffin pans with nonstick cooking spray.
  2. Cream together butter and sugar until light and fluffy. Scrape down the sides of the bowl.
  3. Add egg and extracts, beat until smooth.
  4. Whisk together flour, baking powder, and baking soda in a separate bowl.
  5. Add flour mixture to wet mixture, mix until dough forms.
  6. Press cookie dough into cupcake pan, halfway up the sides.
  7. Bake for 12 minutes, cool, then shape into cups.
  8. Beat together cream cheese and butter until smooth. Add powdered sugar, vanilla, milk, and food coloring.
  9. Add frosting to cookie cups using a piping bag or spoon. Top with sprinkles.
