Strawberry Simple Syrup:
- 2 cups fresh strawberries, quartered (plus extra for garnish)
- 2 1-inch pieces of orange peel
- ¼ cup (50g) granulated sugar
- ¼ cup (57ml) water
- 2 sprigs fresh mint (plus extra for garnish)
Mimosas:
- ⅓ cup (76ml) Grand Marnier liqueur
- 1 cup (227ml) freshly squeezed orange juice
- 1 bottle prosecco or champagne
- Orange slices (for garnish)
- Prepare the Strawberry Simple Syrup: In a medium saucepan, combine strawberries, orange peel, sugar, and water. Simmer, mash strawberries, and stir until sugar dissolves and syrup thickens. Remove from heat, add mint, cool, strain, and refrigerate.
- Make the Mimosas: Combine chilled strawberry syrup with Grand Marnier. Pour syrup mixture, orange juice, and prosecco into a champagne flute. Garnish with strawberry, orange slice, and mint.
