  • 2 tbsp chopped fresh cilantro
  • 2 tbsp mayonnaise or Greek yogurt (optional for creaminess)

  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken: If you don’t have leftover cooked chicken, boil, bake, or grill chicken breasts until fully cooked. Allow them to cool before shredding or dicing into bite-sized pieces.
  2. Toss Chicken with Sweet Chili Sauce: In a medium bowl, combine the cooked chicken with the sweet chili sauce. Stir well to ensure all pieces are evenly coated with the spicy-sweet glaze.
  3. Prepare the Veggies: Wash and shred the lettuce or mixed greens. Thinly slice cucumber and red onion, and shred the carrots. If using avocado, slice it just before assembling to avoid browning.
  4. Assemble the Wraps: Lay each tortilla flat and spread a thin layer of mayonnaise or Greek yogurt in the center, if using. Layer a handful of greens, then add the sweet chili chicken, shredded carrots, cucumber slices, red onion, and avocado if included. Sprinkle with shredded cheese and fresh cilantro.
