Ingredients

Scale

Base Ingredients

  • Cooking spray
  • 1 medium yellow onion, diced
  • 1 large green bell pepper, diced
  • 1 lb ground breakfast sausage
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon fine salt, divided
  • ½ teaspoon black pepper, divided
  • 6 slices cooked bacon, chopped, divided
  • 2 cups shredded Colby-Cheddar or Colby-Jack cheese, divided
  • 6 eggs
  • 1 ¼ cups milk of choice (2% recommended)
  • 1 (28-ounce or two 16-ounce) package frozen tater tots or crispy crowns

Optional for Serving

  • Sour cream
  • Sliced green onions
  • Hot sauce
  • Additional bacon, cooked and chopped

Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 400°F (204°C). Lightly mist a 9×13-inch baking dish with cooking spray and set aside to ensure easy cleanup and prevent sticking.
  2. Cook Sausage and Vegetables: Heat a large skillet or Dutch oven over medium-high heat. Spray with cooking spray, then add diced onion, green bell pepper, and ground breakfast sausage. Cook, stirring occasionally, until the vegetables are crisp-tender and sausage is fully cooked, about 8-10 minutes. Season with garlic powder, Italian seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper; stir well to combine.
  3. Add Bacon and Transfer: Stir in 4 slices of the chopped cooked bacon into the sausage and vegetable mixture. Transfer this mixture evenly into the prepared baking dish.
  4. Incorporate Cheese and Tater Tots: Add 1 cup of shredded cheese and the entire package(s) of frozen tater tots to the baking dish. Gently toss or stir the ingredients to mix and spread evenly throughout.
  5. Mix Egg and Milk Mixture: In a medium bowl or large glass measuring cup, whisk together eggs and milk until smooth. Season with the remaining ½ teaspoon salt and ¼ teaspoon black pepper.
  6. Pour Egg Mixture: Evenly pour the egg and milk mixture over the ingredients in the baking dish, ensuring coverage all around for uniform cooking.
  7. Add Toppings: Sprinkle the remaining 1 cup shredded cheese and remaining 2 slices of chopped cooked bacon evenly over the top of the casserole.
  8. Bake the Casserole: Place the baking dish in the oven and bake for 25-35 minutes, checking at 25 minutes for doneness. The casserole is done when the center is set and the top is lightly browned.
  9. Optional Broil for Crispiness: For a crispy topping, switch oven to broil on high and broil the casserole’s top for 1-2 minutes until golden brown. Watch carefully to prevent burning.
  10. Serve and Garnish: Serve warm, garnished with optional sour cream, sliced green onions, hot sauce, or extra bacon if desired. Enjoy your delicious, hearty breakfast casserole!
