Ingredients

Scale

Salmon Mixture

  • ¾ lb Coho Salmon, skin removed and cut into 1-inch pieces
  • 3 tablespoons Teriyaki Sauce or Japanese BBQ Sauce
  • ¼ teaspoon Kosher Salt
  • ¼ teaspoon Garlic Powder
  • 1 tablespoon Brown Sugar

Rice Base

  • 3 cups Cooked Sushi Rice

Toppings

  • 1 small Avocado, cubed
  • 3 tablespoons Spicy Mayo
  • 1 tablespoon Furikake seasoning
  • 2 tablespoons Crispy Fried Onion Bits
  • 2 tablespoons Scallions, finely diced

Instructions

  1. Prepare the Salmon: Carefully remove the skin from the salmon and cut it into 1-inch pieces. In a medium-sized bowl, combine the salmon pieces with teriyaki sauce and kosher salt, tossing well to coat. Set this mixture aside to marinate briefly while you prepare the rice base.
  2. Build the Sushi Bake: In a small baking dish, evenly spread the cooked sushi rice and gently pat it down with the back of a spoon to create a flat, compact surface. Layer the marinated teriyaki salmon pieces on top of the rice, then sprinkle evenly with garlic powder and brown sugar to add depth and a touch of sweetness.
  3. Broil: Preheat your oven’s broiler and position a rack near the top. Place the baking dish on the top rack under the broiler. Broil for about 6 minutes or until the salmon starts to caramelize and slightly brown on top, watching carefully to avoid burning.
  4. Add Toppings: Once broiling is complete, remove the dish from the oven. Evenly distribute the cubed avocado over the top, then drizzle with spicy mayo. Sprinkle furikake seasoning, crispy fried onion bits, and finely diced scallions to finish, adding layers of flavor and texture.
  5. Serve: Serve the sushi bake immediately while still warm. Scoop portions onto plates and enjoy the harmonious blend of teriyaki salmon, creamy avocado, and crunchy toppings in every bite.

Notes

  • Use Coho salmon or any fresh, high-quality salmon for the best flavor and texture.
  • Adjust the amount of spicy mayo to your preferred heat level.
  • Furikake can be found at most Asian markets; it adds a unique umami flavor with toasted seaweed and sesame seeds.
  • If you don’t have crispy fried onions, toasted panko breadcrumbs can be a crunchy substitute.
  • Make sure to watch the salmon closely while broiling to prevent burning.
  • This dish is best enjoyed fresh but can be refrigerated and gently reheated within a day.
