Pizza Base

Curry Sauce

  • 1 tbsp yellow Thai curry paste

  • 1/2 cup red bell peppers, thinly sliced (1/2 pepper)
  • 1/2 cup carrots, cut into thin ribbons
  • 2 tbsp red onion, thinly sliced
  • 1 and 1/2 cups shredded mozzarella cheese

  • Cilantro leaves
  • Green onions, sliced

Instructions

  1. Preheat Oven: Preheat your oven to 475°F (245°C) and place a pizza stone on the center rack if you have one to ensure a crispy crust.
  2. Prepare Sauce: In a small bowl, whisk together the coconut milk and yellow Thai curry paste until the mixture is smooth and uniform.
  3. Assemble Pizza: Roll out the pizza dough on a floured baking sheet or parchment paper if you plan to use the stone. Spread the prepared curry sauce evenly over the dough. Then evenly distribute the thinly sliced red bell peppers, carrot ribbons, and red onions on top. Finally, sprinkle the shredded mozzarella cheese over the vegetables.
  4. Bake Pizza: Transfer the pizza to the oven and bake for 9 to 11 minutes, or until the crust turns lightly browned and the cheese melts and develops a golden hue.
  5. Cool and Garnish: Remove the pizza from the oven and place it on a wire rack to cool for a couple of minutes, allowing the crust to set for easier slicing.
