  • 1 tablespoon freshly grated turmeric (or 1 teaspoon ground turmeric)
  • 6 cups low-sodium chicken broth
  • 1 lb boneless skinless chicken breast or thighs
  • 1 teaspoon freshly chopped rosemary
  • 1 teaspoon freshly chopped thyme (stems removed)
  • ½ teaspoon salt
  • Freshly ground black pepper, to taste
  • 1 cup pearl couscous
  • ⅔ cup frozen peas (optional, but recommended)

Instructions

  1. Sauté Vegetables: In a large Dutch oven or pot, heat the oil over medium-high heat. Add the minced garlic, diced onion, sliced carrots, and chopped celery. Sauté until the onion is translucent and the vegetables soften.
  2. Add Spices: Stir in the grated ginger and turmeric, cook briefly to release flavors.
  3. Cook Soup: Add broth, chicken, rosemary, thyme, salt, and pepper. Bring to a boil, then add couscous. Simmer for 20-25 minutes.
  4. Shred Chicken: Remove chicken, shred, and return to soup with peas. Cook until heated through.
  5. Adjust Seasoning: Taste and adjust salt and pepper as needed.
