Chicken:

  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil

Pineapple Glaze:

  • 1 can pineapple chunks (20 oz), with juice
  • 0.5 cup brown sugar
  • 0.33 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch

Optional:

  • Red pepper flakes, to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Season the Chicken: Season chicken with salt, pepper, and garlic powder.
  3. Brown the Chicken: Brown seasoned chicken in a skillet over medium-high heat for about 4 minutes.
  4. Whisk the Pineapple Glaze: Combine brown sugar, soy sauce, pineapple juice, rice vinegar, ginger, and cornstarch in a bowl.
  5. Assemble in Baking Dish: Transfer chicken to the baking dish, pour pineapple chunks and glaze over it, and stir gently to coat.
  6. Bake Covered: Cover with foil and bake for 25-30 minutes until chicken is cooked through.
  7. Caramelize Uncovered: Remove foil and bake for another 5-10 minutes to caramelize the glaze.
  8. Rest and Garnish: Let it rest for 5 minutes, then garnish with green onions or reserved pineapple chunks.
