  • 1 large egg
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (240 ml) all-purpose flour
  • 1 teaspoon (5 ml) baking soda
  • 1/4 teaspoon (1 ml) salt
  • 1/2 cup (120 ml) quick-cooking oatmeal
  • 6 ounces (170 g) butterscotch chips (about 1 cup (240 ml))
  • 1 cup (240 ml) confectioners’ sugar
  • 4 tablespoons (60 ml) milk

Instructions

  1. Preheat Oven: Heat your oven to 350 degrees F. Grease a 9x13x2-inch baking dish with butter.
  2. Mix Butter and Sugars: In a bowl, blend butter, granulated sugar, brown sugar, and 1/2 cup peanut butter until smooth using an electric mixer.
  3. Add Egg and Vanilla: Mix in the egg and vanilla extract.
  4. Combine Dry Ingredients: Sift together flour, baking soda, and salt. Add oatmeal to the mixture.
  5. Blend Wet and Dry Mixtures: Combine the oatmeal-flour mix with the creamed ingredients.
