Blueberry Yogurt Mixture

  • 1 cup fresh blueberries
  • 1/2 cup chopped walnuts
  • 3/4 cup 2-5% vanilla Greek yogurt

  • 1 1/2 cups dark chocolate chips
  • 3 tablespoons coconut oil

Instructions

  1. Prepare the Blueberry Yogurt Mixture: Begin by lining a baking sheet with parchment paper to prevent sticking. In a medium bowl, mix together the fresh blueberries, chopped walnuts, and vanilla Greek yogurt until everything is well combined to form the base of your clusters.
  2. Form and Freeze the Clusters: Using a spoon, scoop approximately 2 tablespoons of the blueberry yogurt mixture to form individual clusters. Place each cluster onto the prepared baking sheet, leaving space between each one. Transfer the baking sheet to the freezer and allow the clusters to freeze for 1 to 1.5 hours, or until they are firm.
  3. Melt the Chocolate Coating: About 10 minutes before the clusters are done freezing, melt the dark chocolate chips and coconut oil in a microwave-safe bowl by heating in 30-second increments, stirring in between until fully melted and smooth. Let the melted chocolate cool for about 5 minutes, ensuring it’s cool enough not to melt the yogurt clusters.
  4. Coat the Clusters with Chocolate: Once the yogurt clusters are firm, remove them from the freezer. Using two forks, carefully dip each frozen cluster into the melted chocolate, making sure it is fully coated. Place the coated clusters back onto the parchment-lined baking sheet. Optionally, sprinkle each cluster with a bit of flaky sea salt to enhance the flavor.
  5. Set the Chocolate and Store: After coating all the clusters, return them to the freezer or refrigerator for an additional 10 minutes to allow the chocolate shell to harden. Enjoy the clusters immediately or store leftovers in an airtight container in the refrigerator for up to one week. If stored in the freezer, thaw before eating as the yogurt will be very hard.
