Oatmeal Mixture:

  • 2 cups rolled oats
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup milk of choice
  • ⅓ cup maple syrup or honey
  • 2 eggs, room temperature (can substitute flax eggs)
  • 1 teaspoon vanilla
  • 2 cups blueberries
  • 1 cup grated zucchini (do not squeeze out liquid)
  • 1 ½ tablespoons oil, divided

Instructions

  1. Preheat the oven: Preheat the oven to 375℉ degrees. Grease an 8×8 baking dish with ½ tablespoon of oil.
  2. Mix dry ingredients: In a medium bowl, combine oats, cinnamon, nutmeg, baking powder, and salt. Mix well.
  3. Add wet ingredients: To the dry mix, add eggs, milk, vanilla, remaining oil, and maple syrup/honey. Stir until combined.
  4. Combine with fruit and zucchini: Gently fold in 1 cup of blueberries and grated zucchini. Top with remaining berries.
  5. Bake: Spread the mixture into the prepared dish and bake for 40-45 minutes until the top is golden.
  6. Serve: Enjoy warm with yogurt, milk, bananas, extra berries, whipped cream, or on its own. Store leftovers in the fridge for up to 4 days.
