Instructions

  1. Preheat and prepare baking dish: Preheat the oven to 400°F (200°C). Mist a 9×13-inch baking dish with cooking spray and set it aside to prevent sticking.
  2. Cook vegetables and sausage: Heat a large skillet or Dutch oven over medium-high heat. Spray with cooking spray, add the diced onion, diced green bell pepper, and ground breakfast sausage.   3. Add bacon and transfer mixture: Stir 4 slices of the chopped cooked bacon into the sausage and vegetable mixture. Transfer this mixture evenly into the prepared baking dish.
  4. Add cheese and tater tots: Add 1 cup of shredded cheese and the entire package of frozen tater tots to the baking dish. Toss gently to combine and spread evenly across the dish.
  5. Prepare egg mixture: In a medium bowl or large glass measuring cup, whisk together the eggs and milk until smooth. Season this mixture with the remaining ½ teaspoon salt and ¼ teaspoon black pepper.
  6. Combine and top: Pour the egg mixture evenly over the ingredients in the baking dish. Sprinkle the remaining 1 cup of shredded cheese and the remaining 2 slices of chopped cooked bacon on top.
