Main Ingredients
- Cooking spray
- 1 medium yellow onion, diced
- 1 large green bell pepper, diced
- 1 lb ground breakfast sausage
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 teaspoon fine salt, divided
- ½ teaspoon black pepper, divided
- 6 slices cooked bacon, chopped, divided
- 2 cups shredded Colby-Cheddar or Colby-Jack cheese, divided
- 6 eggs
- 1 ¼ cups milk of choice (2% recommended)
- 1 (28-ounce or two 16-ounce) package frozen tater tots or crispy crowns
Optional Toppings
- Sour cream
- Sliced green onions
- Hot sauce
- Additional cooked bacon
- Preheat and prepare baking dish: Preheat the oven to 400°F (200°C). Mist a 9×13-inch baking dish with cooking spray and set it aside to prevent sticking.
- Cook vegetables and sausage: Heat a large skillet or Dutch oven over medium-high heat. Spray with cooking spray, add the diced onion, diced green bell pepper, and ground breakfast sausage. Cook, stirring occasionally, until the vegetables are crisp-tender and the sausage is fully cooked, about 8-10 minutes. Season with garlic powder, Italian seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper, mixing well.
- Add bacon and transfer mixture: Stir 4 slices of the chopped cooked bacon into the sausage and vegetable mixture. Transfer this mixture evenly into the prepared baking dish.
- Add cheese and tater tots: Add 1 cup of shredded cheese and the entire package of frozen tater tots to the baking dish. Toss gently to combine and spread evenly across the dish.
- Prepare egg mixture: In a medium bowl or large glass measuring cup, whisk together the eggs and milk until smooth. Season this mixture with the remaining ½ teaspoon salt and ¼ teaspoon black pepper.
- Combine and top: Pour the egg mixture evenly over the ingredients in the baking dish. Sprinkle the remaining 1 cup of shredded cheese and the remaining 2 slices of chopped cooked bacon on top.
- Bake the casserole: Bake uncovered for 25-35 minutes, until the center is set and the top is lightly browned. Begin checking at 25 minutes and extend baking time if necessary.
- Optional crispy topping: For a crispy golden top, switch the oven to broil on High and broil the casserole for 1-2 minutes, watching carefully to avoid burning.
- Serve and garnish: Let the casserole cool slightly before serving. Optionally, garnish each serving with a dollop of sour cream, sliced green onions, hot sauce, or extra bacon as desired.
Notes
- Use full-fat or 2% milk for best texture in the egg mixture.
- Frozen tater tots do not need to be thawed before adding to the casserole.
- Feel free to swap Colby-Cheddar cheese with your preferred shreddable cheese.
- This casserole can be prepared a day ahead and baked fresh to save time on busy mornings.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
- For a spicier version, add diced jalapeños or a pinch of cayenne pepper to the sausage mixture.
